Zucchini is low in calories and carbohydrates, making it a keto-friendly food if you’re on the ketogenic diet. It’s loaded with vitamin C and potassium and gives you about two servings of vegetables in every serving.
The best part about air frying zucchini is that it comes out crispy on the outside and tender inside, never soggy or watery. It’s also quick to make, taking only minutes to prepare.

IS AIR FRIED ZUCCHINI HEALTHY?
Yes! Air-fried zucchini is healthy because it’s made in an air fryer. Many people use lots of oil when they make their vegetables, but that’s not needed here because the air fryer will cook them to perfection without all the oil.
When I started eating healthier, one of my greatest concerns was what would happen to my deep-fried zucchini and zucchini fries. I used to make these all the time, and I don’t like giving up my favorite foods, but here’s the great news: air-fried zucchini tastes just as good as deep-fried zucchini!
I’m still amazed that such few ingredients can make such a huge difference!
HOW TO AIR FRY ZUCCHINI
This recipe is made with two medium-sized zucchinis and makes approximately 4 servings. It takes about 5 minutes to prep and 10 minutes of cook time.
INGREDIENTS NEEDED
- zucchini, halved and sliced
- olive oil
- garlic powder
- black pepper
- salt
HOW TO COOK AIR FRYER ROASTED ZUCCHINI
Cut the zucchini into thin slices to start.
It’s very important that they are thin, so if you have trouble doing this, cut them in half lengthwise and then into halves or quarters. This way they will be easier to cook evenly.
Add a little bit of oil and salt.
Place them in a single layer at the bottom of your air fryer basket.
If you have too many pieces they won’t cook evenly, so make sure to leave some space between each one.
Cook for 8 to 10 minutes at 400°F.
Depending on the model you own, you may need to preheat your fryer.
Shake the air fryer basket halfway through the cooking time.
The zucchini pieces should be golden brown when done, and should also have a nice crispy texture.
For even crispier zucchini pieces, you can use the broiler. This is an optional step. You can broil your zucchini for 2-3 minutes until golden brown.
If you do this, make sure not to burn them because that will ruin the taste and it will be harder to digest!
HOW LONG TO AIR FRY ZUCCHINI
It takes about 8 to 10 minutes, which is pretty quick actually. The time can vary depending on your air fryer model. But this is an easy recipe to start cooking while you prepare the rest of your meal.
The cooking time still depends on how thin or thick your zucchini slices are, so make sure not to overcook them because they will get very dry and soggy.
I think it’s best to cook them in a single layer in a thin layer at the bottom of your air fryer in order to make sure they cook evenly.

CAN I ADD DIFFERENT SEASONINGS TO AIR FRIED ZUCCHINI?
Absolutely!
Air-fried zucchini is very versatile and can be easily adapted to your personal taste.
Try sprinkling some Italian seasoning, oregano, Cajun spices, or chili powder for a little kick.
You can also try adding some grated Parmesan cheese and garlic powder, so it will have the same flavor as traditional oven-roasted zucchini.
DOES AIR FRIED ZUCCHINI NEED TO BE REFRIGERATED?
Yes, leftovers do need to be refrigerated.
Keep the leftovers in an airtight container for no more than 2 days. You can also freeze them for up to 6 months.
WHAT CAN I MAKE WITH LEFTOVER ZUCCHINI?
If you have any leftover air-fried zucchini, don’t throw it away!
It’s perfect for making breakfast egg muffins, frittatas, or low-carb zucchini fritters. You can also use it to make pizza toppings, casseroles, or stuffing.
HOW TO PICK FRESH ZUCCHINI AT THE GROCERY STORE
Choose zucchini that is firm and has a nice dark green color.
Make sure to also check for any bruises or soft spots, because these will get very soggy when cooked.

Air Fryer Zucchini

Ingredients
- 2 medium zucchini (halved and sliced)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder

Instructions

Preheat air fryer to 400°F if required by your model.
